Bright by day and intimate by night, Signatures Restaurant is a relaxed, spacious restaurant with commanding city views and an open theatre kitchen.The chefs are true professionals, blending stringent quality standards with flair and imagination, the results are spectacular.Seasonal specialities include Highland lamb with creamed haricot blanc and sweet potatoes or try the wild cod coated in beer batter with chunky chips and mushy peas followed by the Macdonald Manchester Tart with toasted coconut crème fraiche and plum compote.

" Having reserved a table via the hotel´s own website, and despite receiving an automated confirmation of same, I took the unusual step of emailing the restaurant directly just to ensure my booking was ok. A senior staff member confirmed it was. I was therefore disappointed, embarrassed and slightly annoyed upon arrival no reservation existed for us in the restaurant´s own handwritten diary. Nevertheless, tables were available and an apology was offered once I´d shown the head waiter the email exchange I´d had with his boss earlier in the week. We deliberated for some time before finally placing our order. Starters duly arrived and were very nicely presented. All 4 of us chose differently but we all agreed they were delicious. Main course next and again, presentation was a joy to behold. Two of our party felt the lamb and calf liver could have been cooked a little less and I felt the 21 day aged Aberdeen Angus burger, whilst nice, came out second best to a near identical offering I´d had 24 hours earlier on the Albert Dock in Liverpool in less fancy surroundings. I´d also like to know via the menu when my burger is going to include cheese and bacon. Deserts became a rushed affair thanks to our last train departure looming. 3 of us ordered. Again, excellent presentation. My sticky toffee pudding was nice but not blow away fantastic. Food wise our party concluded whilst the presentation had been consistently excellent and the food had been nice, it wasn´t quite deserving of an excellent rating. Where this restaurant was let down, however, was the service, original booking issues aside. The waitress serving our bottle of Chilean Merlot did so without offering up the bottle first and without enquiring whether a tasting was desired. She also poured my glass first, ignoring the 3 ladies in my party. Jugs of tap water for the table took an age to arrive on both occasions we asked for them and the initial offering was poured into a mixture of red and white wine glasses. Upon arrival of the first two main courses to our table, a waiter approached and asked if everything was alright. Nobody had yet picked up their cutlery and two of my companions hadn´t even got their meals at this point. Most peculiar timing. Clearing the main course empties, our waitress proceeded to perilously balance 3 servings before nearly dropping the dirty cutlery. On our suggestion she left the final serving for someone else to clear. That person chose to ignore the finished side order dish! None of the above, in isolation, are major dining crimes but together served to demonstrate the little touches, often the only thing separating a nice dining experience from a truly great one, are missing at Signatures and with so many other restaurants available in Manchester, competition is rife. We also question the ambitions of a hotel restaurant serving burgers...surely something to serve as a bar snack than in the main restaurant itself. One final comment. Signatures were offering a competitively priced 2-3 course menu along with the à la carte, even though our dining time was a Saturday evening. So that gets a thumbs up too. "
